Promise this will be quick and easy to prepare just like the other recipes I have here, Salted Duck Egg(itlog na maalat) and tomato(kamatis) salad is more of a side dish for us Filipinos. It is best consumed with fried or grilled fish, seafood or meat dishes especially adobo along with warm steamed rice nonetheless. Chicken eggs can be used too but duck eggs are preferred because they are bigger in size and they have fatty, tasty yolks! Salted duck eggs are widely available in Asian supermarkets, they come in vacuum sealed packaging usually 6 eggs in a pack. They are ready to eat because they have been boiled. You won’t need salt in this recipe but if you feel it still lacks in saltiness, go ahead and add some. I would suggest to also use chilled fresh tomatoes, or just sliced the tomatoes just prior to serving. It just tastes so good when you bite into that chilled not overly ripe crisp, juicy tomatoes and the salted duck eggs simply compliments it.
And as I have before, there is no exact measurements for this recipe, adjust it to your liking! If salted duck eggs are not available, replace it with boiled chicken eggs and just add salt or fish sauce to it. Try the recipe below and enjoy!
- 2 salted duck eggs, sliced
- 2 large fresh plum tomatoes, sliced
- spring onion chopped for garnishing
- ***1/2 tsp fish sauce(optional)
- In a bowl, put the tomatoes and salted duck eggs.
- Garnish with spring onion.
- Optional: pour the fish sauce on the mixture.
